A hearty chili made with ground turkey and pumpkin puree. It is gluten free and ready in one hour.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) pumpkin puree
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned. Break it into crumbles.
  3. Add onion, garlic, and bell pepper. Cook for 3 minutes.
  4. Stir in pumpkin puree, diced tomatoes, kidney beans, and chicken broth.
  5. Add chili powder, cumin, smoked paprika, salt, and pepper.
  6. Bring to a boil. Reduce heat and simmer for 30 minutes.
  7. Taste and adjust seasoning. Serve hot.

Notes

  • You can use ground chicken or beef instead of turkey.
  • For extra heat, add a diced jalapeño.
  • Store leftovers in the fridge for up to 4 days.
