- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/2 cup grated zucchini, squeezed dry
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup raisins or chopped nuts (optional)
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, mix oats, pumpkin puree, zucchini, maple syrup, applesauce, pumpkin pie spice, baking powder, and salt.
- Add the egg and vanilla. Stir until well combined. Fold in raisins or nuts if using.
- Spoon the batter evenly into the prepared muffin cups.
- Bake for 18 to 22 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

- Store in an airtight container in the fridge for up to 5 days.
- These cups freeze well. Wrap individually and freeze for up to 3 months.
- You can swap maple syrup with honey or agave.
