Roasted beets with a creamy dill sauce make a simple side dish. The beets become sweet and tender. The dill cream adds a cool, tangy finish.

  • 4 medium beets, scrubbed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or plain yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. Trim beet tops and roots. Wrap each beet in foil.
  3. Place wrapped beets on a baking sheet. Roast 40 minutes until tender.
  4. Let beets cool slightly. Peel off skins using a paper towel.
  5. Cut beets into wedges or slices.
  6. Mix sour cream, dill, lemon juice, salt, and pepper in a bowl.
  7. Drizzle cream over beets. Serve warm or at room temperature.

Notes

  • You can use Greek yogurt instead of sour cream.
  • Roast beets up to 2 days ahead. Store in fridge.
  • Add a pinch of garlic powder to the cream for extra flavor.
