Mini sweet peppers are stuffed with creamy goat cheese and roasted until tender. A simple and flavorful appetizer.

Ingredients

  • 1 pound mini sweet peppers (about 24)
  • 8 ounces goat cheese, softened
  • 2 ounces cream cheese, softened
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chives, chopped

Instructions

  1. Preheat the oven to 400°F.
  2. Cut each mini pepper in half lengthwise. Remove the seeds and membranes.
  3. In a bowl, mix the goat cheese, cream cheese, salt, pepper, and chives until smooth.
  4. Fill each pepper half with the cheese mixture. Place them on a baking sheet.
  5. Drizzle the olive oil over the peppers.
  6. Roast for 15 to 20 minutes, until the peppers are tender and the cheese is lightly golden.
  7. Serve warm.

Notes

  • You can substitute feta cheese for the goat cheese.
  • Add red pepper flakes for a spicy kick.
  • Use any color of mini peppers for variety.
