- 1 pound mini sweet peppers (about 24)
- 8 ounces goat cheese, softened
- 2 ounces cream cheese, softened
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh chives, chopped
- Preheat the oven to 400°F.
- Cut each mini pepper in half lengthwise. Remove the seeds and membranes.
- In a bowl, mix the goat cheese, cream cheese, salt, pepper, and chives until smooth.
- Fill each pepper half with the cheese mixture. Place them on a baking sheet.
- Drizzle the olive oil over the peppers.
- Roast for 15 to 20 minutes, until the peppers are tender and the cheese is lightly golden.
- Serve warm.
