1.5 pounds baby potatoes, halved
8 ounces feta cheese block
6 cloves garlic, peeled
3 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/4 teaspoon salt
Fresh parsley for garnish
Instructions
Preheat oven to 400°F.
In a baking dish, toss potatoes with olive oil, oregano, salt, and pepper.
Place feta block in the center of the dish. Add garlic cloves around it.
Bake for 35-40 minutes until potatoes are tender and feta is golden.
Remove from oven. Mash feta and garlic into a creamy sauce.
Toss potatoes in the sauce. Garnish with parsley. Serve hot.
Notes
Use a block of feta, not crumbled, for best texture.
You can add cherry tomatoes in the last 10 minutes of baking.
