This roasted tomato soup is smooth and rich. You make it with oven-roasted tomatoes, garlic, and onion. It is simple to prepare and full of flavor.

Ingredients

  • 2 pounds ripe tomatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Place tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and toss to coat.
  3. Roast for 40 minutes until vegetables are soft and slightly charred.
  4. Transfer roasted vegetables to a blender. Add vegetable broth and basil.
  5. Blend until smooth. Season with salt and pepper.
  6. Heat the soup in a pot over medium heat until warm. Serve hot.

Notes

  • For a creamier soup, stir in 1/4 cup coconut milk before serving.
  • You can use canned tomatoes if fresh are not available. Roast them the same way.
