A rustic apple galette is a simple, free-form pie filled with spiced apples. It’s easier to make than a traditional pie but just as delicious.

  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup cold unsalted butter, cubed
  • 45 tablespoons ice water
  • 3 medium apples, peeled and thinly sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, salt, and sugar. Cut in butter until crumbly.
  3. Add ice water, 1 tbsp at a time, until dough comes together.
  4. Roll dough into a 12-inch circle on a floured surface.
  5. Toss apples with brown sugar, cinnamon, and lemon juice.
  6. Arrange apples in the center of the dough, leaving a 2-inch border.
  7. Fold edges over the apples, pleating as needed.
  8. Brush crust with egg wash and sprinkle with coarse sugar.
  9. Bake for 35-40 minutes until golden brown.
  10. Cool for 10 minutes before serving.

  • Use cold butter for a flaky crust.
