A simple and delicious one-pan meal featuring gnocchi, cherry tomatoes, and fresh mozzarella, inspired by the classic Caprese flavors.

Ingredients

  • 1 pound gnocchi
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, cubed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss gnocchi, tomatoes, garlic, olive oil, salt, and pepper on a sheet pan.
  3. Roast for 15 minutes.
  4. Add mozzarella cubes and roast for 5 more minutes.
  5. Garnish with fresh basil before serving.
