- 1 lb boneless skinless chicken breasts, sliced
- 2 bell peppers (any color), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 packet fajita seasoning (or 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper to taste)
- Juice of 1 lime
- 8 small corn tortillas (for serving)
- Optional toppings: sour cream, salsa, avocado, cilantro
- Preheat oven to 400°F (200°C).
- In a large bowl, combine sliced chicken, peppers, onion, olive oil, fajita seasoning, and lime juice. Toss until evenly coated.
- Spread the mixture in a single layer on a large sheet pan lined with parchment paper.
- Bake for 20 minutes, stirring halfway through, until chicken is cooked through and vegetables are tender.
- Warm tortillas in a dry skillet or microwave.
- Serve the chicken and vegetables on tortillas with your favorite toppings.
Notes
- For extra flavor, marinate chicken for 30 minutes before baking.
- Use corn tortillas to keep the dish gluten free.
- Add a squeeze of fresh lime juice before serving.
