  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a pan and brown the beef cubes on all sides.
  2. Transfer the beef to the slow cooker.
  3. Add carrots, potatoes, onion, and garlic to the slow cooker.
  4. Pour in beef broth and sprinkle with salt, pepper, thyme, and bay leaf.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove bay leaf and serve hot.

Notes

  • Replace beef broth with water if preferred.
  • Add peas or corn for extra vegetables.
  • Thicken the stew with flour if desired.
