- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- Heat olive oil in a pan and brown the beef cubes on all sides.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- Pour in beef broth and sprinkle with salt, pepper, thyme, and bay leaf.
