Tender beef bites and potatoes cooked in a rich garlic butter sauce using a slow cooker for easy preparation.

Ingredients

  • 1.5 lbs beef sirloin, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 cup beef broth

Instructions

  1. Place beef bites and potatoes in slow cooker
  2. In a small bowl, mix melted butter, minced garlic, salt, pepper, thyme, and paprika
  3. Pour garlic butter mixture over beef and potatoes
  4. Add beef broth
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours
  6. Stir once halfway through cooking
  7. Serve hot

Notes

  • For crispier potatoes, broil for 2-3 minutes after slow cooking
  • Can substitute sirloin with stew meat
  • Add vegetables like carrots or mushrooms if desired
