A warm and comforting soup made with carrots and ginger, spiced with cumin and coriander.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and ginger, cook for 1 minute.
  4. Add carrots, vegetable broth, cumin, and coriander. Bring to a boil.
  5. Reduce heat and simmer for 25 minutes until carrots are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and pepper. Serve hot.

Notes

  • Use fresh ginger for best flavor.
  • Swap vegetable broth for chicken broth if not vegan.
  • Garnish with a swirl of coconut milk or yogurt.
