A flavorful sun-dried tomato pesto that’s perfect for pasta, sandwiches, or as a dip.

Ingredients

  • 1 cup sun-dried tomatoes (packed in oil)
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain sun-dried tomatoes and pat dry.
  2. Combine tomatoes, basil, Parmesan, pine nuts, and garlic in a food processor.
  3. Pulse until finely chopped.
  4. With the processor running, slowly add olive oil until smooth.
  5. Season with salt and pepper.
  6. Store in an airtight container in the fridge for up to a week.

Notes

  • Use as a pasta sauce by mixing with cooked pasta and a splash of pasta water.
  • Spread on sandwiches or toast for extra flavor.
  • Add more olive oil if the pesto is too thick.
