- 4 large bell peppers
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 1 tbsp olive oil
- Preheat oven to 375°F.
- Cut tops off peppers and remove seeds.
- Brown ground beef in a pan, drain fat.
- Add taco seasoning and water as directed on packet.
- Mix cooked rice into beef.
- Stuff peppers with beef mixture.
- Place peppers in baking dish, drizzle with olive oil.
- Bake for 25 minutes.
- Sprinkle cheese on top and bake for 5 more minutes.
Notes
- Use any color bell peppers.
- Substitute ground turkey for beef if preferred.
- Add black beans for extra fiber.
