Teriyaki meatballs are juicy beef meatballs coated in a sweet and savory homemade teriyaki sauce. They make a quick and satisfying dinner.

Ingredients

  • 1 lb ground beef
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp vegetable oil
  • 2 green onions, sliced for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Mix ground beef, breadcrumbs, egg, garlic, and ginger in a bowl.
  3. Form the mixture into 1-inch meatballs.
  4. Heat oil in a skillet over medium heat.
  5. Brown the meatballs on all sides.
  6. Transfer meatballs to a baking sheet.
  7. Bake for 10 to 12 minutes until cooked through.
  8. Combine soy sauce, mirin, brown sugar, and rice vinegar in a saucepan.
  9. Bring the sauce to a simmer.
  10. Stir in the cornstarch slurry.
  11. Cook until the sauce thickens.
  12. Add the meatballs to the sauce and coat evenly.
  13. Garnish with green onions.

Notes

  • Use tamari instead of soy sauce for a gluten-free version.
  • Serve with steamed rice and vegetables.
  • Freeze cooked meatballs in sauce for up to 3 months.
