- 1 9-inch pumpkin pie, chilled
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- Preheat oven to 350°F. Grease a 10-inch springform pan.
- Mix flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until light.
- Beat in eggs one at a time, then add vanilla.
- Add flour mixture alternately with buttermilk, starting and ending with flour. Mix until just combined.
- Pour half the batter into the pan. Place the chilled pumpkin pie on top.
- Cover the pie with the remaining batter. Smooth the top.
- Bake for 50 to 60 minutes, until a toothpick comes out clean.
- Cool in the pan for 15 minutes, then remove the sides. Cool completely before slicing.
Notes
- Chill the pie overnight for easier handling.
- Use a springform pan for easy removal.
- Let the cake cool fully to set the layers.
