A Thanksgiving dessert with pumpkin pie baked inside a spiced cake. Serves 12.

  • 1 9-inch pumpkin pie, chilled
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat oven to 350°F. Grease a 10-inch springform pan.
  2. Mix flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until light.
  4. Beat in eggs one at a time, then add vanilla.
  5. Add flour mixture alternately with buttermilk, starting and ending with flour. Mix until just combined.
  6. Pour half the batter into the pan. Place the chilled pumpkin pie on top.
  7. Cover the pie with the remaining batter. Smooth the top.
  8. Bake for 50 to 60 minutes, until a toothpick comes out clean.
  9. Cool in the pan for 15 minutes, then remove the sides. Cool completely before slicing.

Notes

  • Chill the pie overnight for easier handling.
  • Use a springform pan for easy removal.
  • Let the cake cool fully to set the layers.
