A simple and comforting tomato soup made with canned tomatoes and basic pantry ingredients.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add crushed tomatoes, vegetable broth, and sugar.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in heavy cream if using. Season with salt and pepper.
  8. Serve hot.

Notes

  • You can use fresh tomatoes instead of canned. Roast them first for deeper flavor.
  • For a vegan version, skip the cream or use coconut milk.
