  • 1 1/2 cups all-purpose flour

  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, ube extract, and ube halaya until well combined.
  4. In a separate bowl, whisk the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Mix until a soft dough forms.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Scoop tablespoon-sized balls of dough. Roll each ball in powdered sugar until fully coated.
  8. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10 to 12 minutes. The edges should be set but the centers still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
