Soft and chewy vegan cookies made with pumpkin puree and chocolate chips. A perfect fall treat.

  • 1 cup pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin puree, melted coconut oil, brown sugar, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. Add dry ingredients to wet ingredients. Stir until just combined.
  5. Fold in vegan chocolate chips.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 12 to 14 minutes, until edges are golden.
  8. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Chill the dough for 30 minutes if you prefer thicker cookies.
  • Use canned pumpkin puree, not pumpkin pie filling.
  • Substitute all-purpose flour with gluten-free blend for gluten-free option.
