White Chicken Chili

A hearty white chicken chili with tender chicken, white beans, and green chilies. This soup is creamy and flavorful. It is easy to make in one pot.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add garlic, cumin, and oregano. Cook for 1 minute until fragrant.
  3. Add chicken breasts, chicken broth, green chilies, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked through.
  5. Remove chicken from pot and shred with two forks. Return shredded chicken to pot.
  6. Stir in white beans and simmer for 10 minutes.
  7. Turn off heat. Stir in sour cream and lime juice.
  8. Serve garnished with cilantro.

Notes

  • Use rotisserie chicken to save time. Add it after step 4.
  • For a thicker chili, mash some beans before adding.
  • Adjust lime and cilantro to taste.
