A classic Southern dessert with layers of vanilla pudding, ripe bananas, and vanilla wafers.

Ingredients

  • 1/2 cup white sugar
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 3 eggs, separated
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, sliced
  • 1 box (12 ounces) vanilla wafers
  • 1/4 cup white sugar for meringue (optional)

Instructions

  1. In a medium saucepan, combine 1/2 cup sugar and flour. Gradually whisk in milk.
  2. Cook over medium heat, stirring constantly, until mixture thickens and bubbles.
  3. Remove from heat. Beat egg yolks in a small bowl. Slowly whisk 1 cup of hot milk mixture into yolks.
  4. Pour egg mixture back into saucepan. Cook and stir for 2 minutes more. Remove from heat. Stir in vanilla.
  5. Layer vanilla wafers and sliced bananas in a 9×13 dish. Pour pudding over top.
  6. Beat egg whites until stiff peaks form. Gradually add 1/4 cup sugar, beating until glossy. Spread over pudding.
  7. Bake at 350°F for 10 minutes, until golden. Chill for at least 2 hours before serving.

Notes

  • Use ripe but firm bananas for best texture.
  • Chill the pudding completely before serving.
  • Store leftovers in the refrigerator for up to 2 days.
