A classic apple pie with a flaky crust and sweet cinnamon-spiced apple filling.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold butter, cubed
  • 68 tablespoons ice water
  • 6 cups peeled and sliced apples (Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix flour and salt in a bowl. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Divide into two discs, wrap, and refrigerate for 1 hour.
  2. Preheat oven to 425°F (220°C).
  3. In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat.
  4. Roll out one dough disc on a floured surface to fit a 9-inch pie dish. Place dough in dish, pressing gently.
  5. Pour apple filling into the crust. Dot with small pieces of butter (optional).
  6. Roll out second dough disc. Place over filling. Trim and crimp edges. Cut slits in top for steam vents.
  7. Brush top with beaten egg. Sprinkle with coarse sugar if desired.
  8. Bake at 425°F for 15 minutes. Reduce heat to 375°F (190°C) and bake 40-45 minutes until golden and filling bubbles.
  9. Cool on a wire rack for at least 2 hours before slicing.

Notes

  • Use firm apples like Granny Smith for best texture.
  • Chill dough well to keep crust flaky.
