Ingredients

  • 1.5 lbs potatoes, cubed
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley

Instructions

  1. Preheat oven to 400°F
  2. Toss potatoes with oil, garlic, salt and pepper
  3. Spread on baking sheet in single layer
  4. Roast for 30 minutes, flipping halfway
  5. Sprinkle with parmesan and parsley
  6. Roast 10 more minutes until crispy

Notes
