A creamy and flavorful Indian dish made with chickpeas in a spiced tomato sauce.

  • 2 tablespoons vegetable oil or vegan butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1 (15-ounce) can tomato puree
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup coconut cream (or heavy cream for non-vegan)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add garlic and ginger, cook for 1 minute until fragrant.
  3. Stir in garam masala, cumin, coriander, turmeric, and chili powder. Cook for 30 seconds.
  4. Pour in tomato puree and bring to a simmer. Let it cook for 5 minutes.
  5. Add chickpeas, coconut cream, sugar, and salt. Stir well and cook for 10 minutes, allowing flavors to meld.
  6. Taste and adjust seasoning if needed. Garnish with fresh cilantro.

Notes

  • Serve with basmati rice or warm naan bread.
  • For a thicker sauce, simmer longer uncovered.
  • Adjust chili powder to control heat level.
  • You can add spinach or kale in the last 2 minutes of cooking.
