Crispy on the outside, soft inside. These Italian ricotta doughnuts are easy to make at home.

Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Mix ricotta, eggs, sugar, and vanilla in a bowl.
  2. Add flour, baking powder, and salt. Stir until combined.
  3. Heat oil in a deep pot to 350°F.
  4. Drop spoonfuls of batter into the hot oil.
  5. Fry for 2 to 3 minutes per side until golden.
  6. Remove with a slotted spoon. Drain on paper towels.
  7. Dust with powdered sugar before serving.

Notes

  • Use whole milk ricotta for a richer flavor.
  • Do not overmix the batter. It keeps the doughnuts light.
  • Keep oil at a steady temperature to avoid burning.
