These Jack-O’-Lantern Sandwich Cookies are fun Halloween treats. They have a pumpkin-shaped cookie with orange icing filling.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • Orange food coloring
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F. Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream butter and granulated sugar in a large bowl until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually add flour mixture to the butter mixture. Mix until combined.
  6. Stir in pumpkin pie spice and orange food coloring until the dough is evenly orange.
  7. Roll dough on a floured surface to 1/4 inch thickness. Cut with a pumpkin-shaped cookie cutter.
  8. Place cookies on prepared baking sheets. Bake for 8 to 10 minutes until edges are lightly golden.
  9. Let cookies cool on a wire rack.
  10. For the filling, whisk powdered sugar and milk until smooth. Add a drop of orange food coloring if desired.
  11. Spread filling on the flat side of one cookie. Top with another cookie to make a sandwich.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • You can use a round cutter and draw a pumpkin face with icing instead.
