- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- Orange food coloring
- 1 cup powdered sugar
- 2 tablespoons milk
- Preheat your oven to 350°F. Line baking sheets with parchment paper.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and granulated sugar in a large bowl until light and fluffy.
- Beat in egg and vanilla extract.
- Gradually add flour mixture to the butter mixture. Mix until combined.
- Stir in pumpkin pie spice and orange food coloring until the dough is evenly orange.
- Roll dough on a floured surface to 1/4 inch thickness. Cut with a pumpkin-shaped cookie cutter.
- Place cookies on prepared baking sheets. Bake for 8 to 10 minutes until edges are lightly golden.
- Let cookies cool on a wire rack.
- For the filling, whisk powdered sugar and milk until smooth. Add a drop of orange food coloring if desired.
- Spread filling on the flat side of one cookie. Top with another cookie to make a sandwich.
Notes
- Store cookies in an airtight container at room temperature for up to 5 days.
- You can use a round cutter and draw a pumpkin face with icing instead.
