Homemade poptarts with a pumpkin filling and maple glaze.

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1/2 cup cold water
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 cup powdered sugar
- 2 tablespoons maple syrup
- 1 tablespoon milk
- Mix flour and salt. Cut in butter until crumbly. Add water and form dough. Chill for 30 minutes.
- Combine pumpkin puree, brown sugar, and pumpkin pie spice for filling.
- Roll dough into a rectangle. Cut into 3×4 inch rectangles.
- Place a spoonful of filling on half the rectangles. Top with remaining rectangles. Seal edges with a fork.
- Bake at 375°F for 20 minutes until golden.
- Whisk powdered sugar, maple syrup, and milk. Drizzle over cooled poptarts.
Notes
- You can add chopped pecans to the filling for crunch.
- Store in an airtight container for up to 3 days.
