Maple-Glazed Pumpkin Poptarts

Homemade poptarts with a pumpkin filling and maple glaze.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup cold water
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon milk

Instructions

  1. Mix flour and salt. Cut in butter until crumbly. Add water and form dough. Chill for 30 minutes.
  2. Combine pumpkin puree, brown sugar, and pumpkin pie spice for filling.
  3. Roll dough into a rectangle. Cut into 3×4 inch rectangles.
  4. Place a spoonful of filling on half the rectangles. Top with remaining rectangles. Seal edges with a fork.
  5. Bake at 375°F for 20 minutes until golden.
  6. Whisk powdered sugar, maple syrup, and milk. Drizzle over cooled poptarts.

Notes

  • You can add chopped pecans to the filling for crunch.
  • Store in an airtight container for up to 3 days.
