These pumpkin pie bars have a buttery crust and creamy pumpkin filling. They are easy to make and perfect for fall.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup cold butter, cubed
  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix flour and sugar. Cut in butter until crumbly. Press mixture into the pan. Bake for 15 minutes.
  3. In another bowl, whisk pumpkin puree, condensed milk, eggs, pumpkin pie spice, and salt until smooth. Pour over the crust.
  4. Bake for 30 to 35 minutes, until the center is set. Cool completely in the pan.
  5. Refrigerate for at least 2 hours before cutting into bars.

Notes

  • Use a toothpick to test doneness; it should come out clean.
  • Store bars in the refrigerator for up to 5 days.
